Ingredients
- For custard:
- 250 grams of milk
- 20 grams of vanilla sugar
- 30 grams of icing sugar
- 15 grams of flour
- 20 grams of cornmeal
- 1 egg yolk
- For the brioche:
- 300 grams of flour
- 100 grams of butter
- 60 grams of milk
- 10 grams of fresh baker's yeast
- 35 grams of powdered sugar
- 3 eggs
- a pinch of salt
- To mount:
- 100 grams of chocolate chips
- 1 egg
Instructions
- We start the preparation of this Swiss Brioche with thermomix making the custard.
- Pour the milk together with the vanilla and icing sugar, the pastry and corn flour and the egg into the thermomix glass, set 7 minutes / Temperature 100 ° / Speed 4.
- After these minutes, program 6 seconds / Speed 8.
- Add the custard in a bowl, cover with plastic wrap (flush with the cream to avoid hardening the surface) and refrigerate.
- Now we are dedicated to the brioche dough, in this case once clean in a thermomix glass add the milk and yeast, program 4 minutes / Temperature 37 ° / Speed 2.
- Subsequently, add the flour, icing sugar, eggs, butter and pinch of salt, program 10 minutes / Knead.
- When the dough is ready, place it in a bowl and cover with a clean kitchen cloth and let stand for 2 hours.
- After 2 hours, it is time to assemble.
- Begin by stretching the dough, with the help of the rolling pin, on the work table with flour until it forms a rectangle.
- Pour the custard by spreading it with a spatula in the middle of the rectangle, sprinkle the chocolate chips.
- Fold the dough with half that has no cream over half with cream and chocolate.
- Then, proceed to cut into 6 parts or 6 Swiss Brioche.
- Place them on a baking sheet that is lined with nonstick paper.
- Again cover them with a clean cloth and let stand another couple of hours.
- At the end of the resting time, preheat the oven to 180 ° C, beat an egg and brush each Brioche.
- Bake for 15 to 20 minutes or until the Brioches turn golden brown.
