15 grams Vanilla sugar

Preheat the oven to 150 ° C.
Put 500 grams of whole milk and 1 vanilla pod divided into 2 on the Thermomix. Heat 8 min 30 sec / 70 ° C / speed 2.
Transfer the contents of the Thermomix to a container covered with a plastic film and set aside.
Wash and dry the Thermomix container.
Add the whip to beat.
Add 4 eggs (only the yolks), 120 grams of powdered sugar, 15 grams of vanilla sugar and 1 teaspoon of water in the Thermomix. Mix 3 min / speed 4.
Add 125 grams of butter to a bowl.
Melt the butter in the microwave (or a saucepan) and add it to the Thermomix bowl.
Mix 2 min 30 sec / speed 4 and remove the whisk.
Add 115 grams of flour and 1 pinch of salt in the Thermomix. Mix 15 sec / speed 5.
Add the milk you had reserved (without the vanilla pod).
Mix 30 sec / speed 5.
Transfer the Thermomix contents to a container and set them aside.
Wash and dry the Thermomix container.
Add the 4 egg whites and 1 pinch of salt to the Thermomix.
Add the whip to beat.
Mix 3 min / speed 3.5 and remove the whisk.
Mix the prepared whites in 3 times, stirring gently with a spatula. It must remain lumps, this is what will allow the cake to get 3 different layers.
Butter a mold to lose (Ø 20 cm).
Pour the preparation into the mold and then tap it on the work surface so that the air bubbles come out.
Put in the oven for 50 min at 150 ° C.
Reserve until it has cooled.
