Ingredients
- 500 grams of cream, (minimum 35% fat)
- 80 grams sugar
- 200 grams of gluten-free fondant chocolate
Instructions
- To start our mousse we will have our glass of thermomix very cold (we can have it in the fridge a while before or even put some ice a while before and then dry with a cloth before starting this will help the cream to assemble.
- We will put the sugar in the thermomix glass and we will program 8 seconds / speed 10
- With the spatula we lower the remains stuck to the sides, add the cream and program 6 minutes / 90ºC / speed 2 Add the chocolate in pieces and program 30 seconds / speed 3
- We put everything in a bowl and let it cool down for 12 hours. Finally, we put the butterfly, the truffle cream and we program speed 3 (no time) until it is assembled.
