Cristina Pedroche’s cheesecake with thermomix

Instructions

1. The first thing to do is to preheat the oven to 190ºC.
2. Let's prepare the base
3. We put in our thermomix glass the package of cookies, they are worth any since they are to make the base, from cookie maria or if you like like like me a base of hard and sturdy cookie to my I like more digestive cookie that gives more consistency and program 15 seconds / speed 7
4. Lower with the spatula the remains that are stuck to the sides of our thermomix.
5. Add the butter in pieces and not too hard and program 2 minutes / 50ºC / speed 3.
6. Prepare a mold of between 22 and 25 cm and put the cookies with the butter as a base and press well with the hand so that we have a tight base.
7. Keep the base in the refrigerator
8. Let's move on to the filling
9. Put the Parmesan cheese in small pieces in our thermomix glass and grind 20 seconds / speed progressive 8-9-10 Add the cream cheese, cream, eggs, fresh cheese, sugar and a pinch of salt and program 2 minutes / speed 5.
10. Add the flour and program 2 minutes / speed 5.
11. Put the contents in the reserved mold, on top of the cookies.
12. Put the cake in the oven at 190ºC for 40-45 minutes (if we like it more liquid we can leave it only 35 minutes, if we like it very curdled 45-50 minutes).
13. Remove from the oven and wait for it to cool a little and then put it in the refrigerator for 4 hours before eating.
14. Remove from the oven, wait for it to temper and reserve in the refrigerator for at least 4 hours.
