Ingredients of Steak Tartare with Thermomix
400 grams minced red meat (if you prefer it could be made with beef and a milder flavor)
1 tablespoon of Worcestershire sauce, Lea & Perrins
1 tablespoon ketchup
10-15 grams old mustard (in grains)
6 tablespoons extra virgin olive oil
2 spring onions
4 peeled garlic cloves
6 sweet and sour pickles in vinegar
2 tablespoons capers
2 tablespoons mayonnaise
1 tablespoon Modena vinegar
a pinch of peppers
1 egg
salt to taste,
the same, to taste tabasco
Preparation of Steak Tartare with Thermomix
We will start by crushing the onions together with 2 tablespoons of virgin olive oil in our Thermomix bowl
30 seconds / speed 5
Once crushed, add the capers, the egg, the mayonnaise, the mustard, the vinegar, the garlic, the pickles, the ketchup, the Perrins sauce, the Tabasco salt and pepper and mix everything.
20 seconds / speed 4
We remove everything and reserve in a bowl
Now we put in our glass of the thermomix without cleaning the 400 gr of the meat and we chop again
7 seconds progressive speed 5-10
Add the meat to the bowl that we have reserved along with the rest of the ingredients
Now we are mixing manually adding 4 tablespoons of virgin olive oil progressively
Finally, we will put everything in the refrigerator until it is time to eat it.
To serve, we can put the yolk of a raw egg crowning it or a chopped chive
