Ingredients of Puff pastry canutillos with cream, pastry cream and thermomix truffle
1 sheet of rectangular puff pastry
1 pot of whipping cream 35% fat.
powdered chocolate
100 grams icing sugar.
Eggs
500 grams of milk
1 teaspoon vanilla sugar
50 grams Corn flour (Maizena)
Chocolate to melt.
100 grams sugar.
Whole milk.
Preparation of puff pastry canutillos with cream, pastry cream and thermomix truffle
First we make the pastry cream in the Thermomix so that it cools down.
We put: 100gr. of sugar, 500gr. of milk, a teaspoon of vanilla sugar, 50gr. of cornstarch and 3 eggs, (I only put the yolks, I don’t like the egg flavor.)
We put all the ingredients in the Thermomix bowl and program 7 minutes, 90º, speed 4.
We remove and reserve in a container covered with film or in a pastry bag depending on the use that is going to be given pastry cream.
Now stretch the puff pastry and cut 2cm strips. so so. We roll them in the cones and paint with egg.
Put them in the oven for about 20 minutes.
When they are ready, take them out and let them cool.
Now we are going to prepare the cream:
Put half the pot of cream (always very, very cold) and icing sugar in the Thermomix bowl. Speed 3 1/2 without time, checking that it rises and doesn’t overdo it.
To prepare the truffle I do the same steps as with the cream but I add 1 tablespoon of chocolate powder.
Fill the eclairs with the pastry bag and fill the tip with the melted chocolate.
