Crispy on the outside and soft on the inside, filled with whipped cream or pastry cream, they are ideal for an elegant snack or a weekend dessert.

Profiteroles in Air Fryer
100ml milk
100 ml of water
100g butter (approx. 3½ oz)
100g flour (approx. 3½ oz)
1 pinch of salt
3 large eggs
200 ml whipping cream (minimum 35% MG)
1 tablespoon of sugar
icing sugar
In a medium saucepan, add milk, water, butter and a pinch of salt.
Heat over medium heat, stirring with a wooden spoon, until the butter melts and the mixture begins to boil slightly.
⚠️ Don’t let it boil completely: just bubble.
Remove from heat and add all the flour at once.
Stir vigorously until a compact mass is formed that separates from the walls of the saucepan and groups into a ball.
Put the saucepan back on medium heat and cook. 2–3 minutesstirring constantly.
This will remove extra moisture and help the profiteroles hold their shape as they cook.
The dough should be visible shiny, smooth and somewhat dense.
Transfer the dough to a bowl and let it rest. 3–5 minutes.
Add the eggs one by onebeating well after each addition.
There should be a dough thick but softthat slowly fall from the spoon when lifting it.
Preheat the air fryer at 180°C (360°F) for 3 minutes.
Place the dough in a pastry bag with smooth or curly nozzle.
Form small piles of about 3–4 cm in diameter on the rack accessory or a perforated tray suitable for the fryer.
Flatten the top slightly with a damp finger or a teaspoon.
Bake in the air fryer 10–12 minutesuntil they are golden and swollen.
When you tap them gently from the bottom, they should sound hollow.
💨 Do not open the fryer during cooking: steam is key for them to rise.
Place the profiteroles on a rack and let them cool completely.
Beat the cream with sugar until it mounts firmly.
Place in a pastry bag and fill the profiteroles from the base (making a small hole) or cut them in half and add the filling.
Sprinkle with icing sugar just before serving.
You can also bathe them in melted chocolate either candyaccording to taste. 🍫

🔥 The dough drying step (step 3) It is essential to prevent them from deflating.
🍃 Bake in small batches If your fryer is compact; They need room to inflate.
🍫 Alternative fillings: pastry cream, chocolate mousse, coffee cream or vanilla cream.
🌬️ For a crispier finishleave the profiteroles for 5 minutes in the turned off fryer with the door ajar.
