🍓 Strawberry Cake in the Air Fryer: The Juiciest and Springiest You’ll Make in 50 Minutes

That’s this strawberry cake in air fryer. Forget about the oven that heats the entire house: here it rises like crazy, it is perfectly cooked on the inside and with that caramelized touch on top that makes you repeat a piece. It is pure spring flavor in every spoonful, with fresh strawberries that provide natural moisture and an aroma that fills everything.

It is the perfect cake for Sunday breakfast with coffee, snack with the kids, improvised dessert when visitors arrive or to take to the office and be the star. And the best thing… it uses seasonal strawberries that are cheap and sweet, and it is made in a mold that fits in your air fryer!

🛒 Ingredients (23×13 cm mold → 8-10 servings)

  • 🧈 225 g unsalted butter at room temperature (soft as pomade!)
  • 🍚 200 g granulated sugar (normal white)
  • 🥚 4 large eggs at room temperature
  • 🌿 1 teaspoon pure vanilla extract
  • 🌾 250 g all-purpose wheat flour (or pastry flour for more fluffiness)
  • 🍓 175-200 g fresh strawberries, cut into small cubes (remove the stems and dry them well)

Crispy topping:

  • 🍚 2 tablespoons granulated sugar (for that magical crust)

Extras that I always add and they blow your mind:

  • Zest of 1 lemon (gives brutal freshness)
  • ½ teaspoon extra baking powder if you want fluffier
  • Greek yogurt or cream for a moister version

👩‍🍳 Step-by-step preparation (easier than a package cake)

1️⃣ Preheat and prepare the mold

Turn on the air fryer at 160°C (3-5 minutes). Grease a 23×13 cm mold with butter and flour (or baking paper on the base).

2️⃣ Cream butter + sugar (3 minutes)

Beat butter + sugar at medium speed until pale and fluffy (it looks like cream). Tip: if you don’t have a mixer, use manual beaters for 5 minutes.

3️⃣ Eggs one by one

Add the eggs one at a time, beating well after each addition (30 seconds each). Stir in vanilla (+ lemon zest if using).

4️⃣ Flour carefully

Low speed and add the flour little by little. For when it is almost integrated (don’t overdo it!). Sprinkle the strawberry cubes with 1 teaspoon of flour and add them with enveloping movements.

5️⃣ To the mold and topping

Pour the dough, smooth with a spatula. Sprinkle the 2 tablespoons of sugar on top (this is gold!).

6️⃣ Bake in an airfryer (45-50 magical minutes) ✨

Put the mold in the basket. ➤ 160 °C → 45-50 minutes After 40 minutes, prick the center: if it comes out clean → ready. If it browns too much on top, cover with aluminum foil for the last 10 minutes.

7️⃣ Perfect chilled

Leave it in the mold for 5 minutes → run a knife along the edges → remove from the mold onto a wire rack. Cool completely (or cut into it warm and cry with happiness).
