If you thought that cupcakes were just candy, get ready for a spectacular twist: these mini meat pies in air fryer combine all the comfort of a classic meatloaf with the playful presentation of a cupcake, topped with a frosting of creamy mashed potatoes. The air fryer ensures that each cupcake is perfectly cooked, juicy on the inside and with lightly browned edges without adding extra fat.
This recipe is not only visually appealing—ideal for children and adults—but it is also extremely practical. You can use leftover vegetables, add cheese for extra flavor, or prepare the base in advance and cook just before serving. The combination of meat, vegetables and creamy puree turns each bite into a festival of textures and flavors.

Air Fryer Mini Meatloafs
🐄 450 g minced beef
🥕 2 grated carrots
🧅 1 grated yellow onion
🥚 2 large eggs
🍅 60 ml of ketchup
🍞 100 g breadcrumbs
🧀 100 g grated parmesan cheese
🧄 2 cloves of garlic, minced
🌿 2 tablespoons chopped fresh parsley
🧂 1 teaspoon salt
⚫ ½ teaspoon ground black pepper
🥔 2 large potatoes (about 500 g), peeled and cut into cubes
🧂 1 teaspoon salt
🧈 1 tablespoon butter (about 15 g)
🥛 120 ml of milk
🌿 Chopped fresh parsley, to decorate
In a large bowl, combine all meatloaf ingredients. Mix gently; do not overwork the meat so that the pies are juicy.
Place paper cases in a muffin tin or lightly grease the wells and fill each one with the meat mixture, forming small domes.
Preheat the fryer to 165°C and cook the mini meat pies for 25–30 minutes. The interior should reach around 70°C and the surface should look golden.
While the cupcakes are cooking, cook the potatoes in salted water for 15–20 minutes, until tender.
Drain, add butter and milk, and puree until smooth and creamy.
Place the puree in a piping bag or freezer bag with one corner cut off. Cover each meatloaf with the puree, simulating a cupcake frosting. Sprinkle with fresh chopped parsley and serve hot.
More vegetables: Add grated zucchini, peppers or spinach to the mix for extra color and flavor.
Cheese version: Stir cheddar or mozzarella into meat, or sprinkle on top before cooking.
Caramelized touch: Mix ketchup with a teaspoon of brown sugar and brush the cupcakes during the last 10 minutes of cooking.
Time control: each fryer varies; Start with 25 minutes and adjust based on size or power.
Prevent them from drying: Mix the meat gently and do not overload the fryer.
Perfect accompaniment: roasted vegetables, extra puree or fresh salad.
Fridge: Up to 3 days in an airtight container.
Freezer: up to 3 months; Wrap in plastic wrap and aluminum foil.
Reheat:
Microwave: 1–2 minutes until hot.
Air fryer: 175°C for 5–7 minutes until warm inside.
