Ingredients
151 grams of multigrain flour
11 grams of salt
400 milliliters of water
10 grams of fresh baker’s yeast
450 grams of bread flour
Preparation
When you have gathered all these ingredients, follow the steps that we indicate:
Add the yeast and water to the glass. Program a
speed 1 / 37º / 1 minute.
Then add the salt and the two flours. Program a
speed 6/40 seconds.
Reprogram to
spike speed / 1 minute.
Repeat that last step up to four times. Of course, between one and the other you must allow at least 12 minutes to pass.
Pour the contents of the glass into a bowl, cover it with a kitchen towel and let it rest until it has doubled in volume.
With the dough, shape one or two bars and let them rest again.
Then make some slices on top and put them in the oven, previously preheated. Keep them there for about 30 minutes: 10 minutes with steam at 220º and 20 minutes without steam at 220º.
