Ingredients
- For the starter, starter or mother dough:
- 87 grams of bread flour
- 12 grams of fresh pressed yeast
- 52 grams of milk
- For the mass:
- 1 spoon of sugar
- 352 grams of water
- 12 grams of salt
- 600 grams of bread flour
- 52 grams of olive oil
Preparation
- When you have gathered all those ingredients, follow the steps below:
- We are going to start making the sourdough or starter dough. So pour the yeast and milk into the glass. Put the robot to work
- speed 2 / 37º / 2 minutes.
- Then add the flour and program at
- speed 6/15 seconds.
- The resulting mass takes it out of the glass. Shape it into a ball and put it in a bowl. Add to this warm water until it covers the ball and keep it like that for about 12 minutes.
- Then continue with the other dough. To do this, pour all the ingredients of that and even the ball of the starter dough into the glass. Program a
- spike speed / 3 minutes.
- Let it sit in the glass for about an hour.
- Then move the dough with the spatula and program again to
- spike speed / 1 minute.
- Now with the dough, go shaping the muffins that are rounded and quite flat.
- In baking trays, lined with the corresponding greaseproof paper, place the muffins and cover them with kitchen towels for another hour.
- After that time, put the first tray in the oven, previously preheated, and keep it there for about 15 minutes at 180º. Do the same with the rest of the trays.
