Preparation of pita bread with thermomix

1. We put in the glass of our thermomix the water, oil and sugar and program
2. 1 minute, 37º, speed 1.
3. Add the yeast and mix
4. 10 seconds, speed 4.
5. Add the flour and salt and program
6. 30 seconds, speed 6.
7. Once the previous steps are done, we are going to knead, program
8. 3 minutes, cup closed, Spike speed.
9. Let it rest in the same glass of the thermomix until it doubles in volume, it usually takes approximately 30 minutes.
10. Preheat the oven to 220º.
11. We take the dough out on the floured work table and make balls of approximately 50 g.
12. Once done, we extend them with a roller or as we do with a bottle, forming pancakes of 12 or 14 cm in diameter.
13. 14 or 15 units should come out. (You can make them more or less large, as long as the dough is very thin)
14. Place the pancakes in the oven, on baking paper. Be careful not to flour the pancakes too much when shaping them.
15. We bake for 5 minutes.
16. Note: the pita bread must be hollow inside (to be able to fill it).
17. For this, it is very important to follow the following recommendations:
18. – Preheat the oven well.
19. – Do not let the pancakes brown too much.
20. – Cover with a damp cloth when they come out of the oven.
