- 4 clean fresh salmon fillets (without skin or bones)
- 250 grams of sliced mushrooms
- 1 lemon (grated and squeezed)
- 1 tablespoon of butter
- 100 grams of shallots
- 50 grams of white wine
- 50 grams of cream for cooking
- 175 gr of cheese or cream cheese
- 500 grams of water
- a pinch of freshly ground black pepper
- 2 pinches of nutmeg
- Salt

- Season the salmon loins with salt and pepper to taste and with the lemon juice (reserve)
