Ingredients for Salmon and Cheese Bagels with Thermomix
120 grams of pastry flour
130 grams of strong flour
10 grams of fresh pressed yeast
130 grams of water, (and 1000 g more for the oven)
20 grams of sugar
15 grams of butter at room temperature
5 grams of sunflower oil
1/2 teaspoon powdered milk, (optional)
1 beaten egg to paint
Sesame and/or poppy seeds for sprinkling
To fill:
120 grams of salmon
120 grams of cream
Preparation of salmon and cheese bagels with Thermomix
Place the yeast and water in the Thermomix bowl to activate the rise, program.
30 seconds / Temperature 37° / Speed 1
Then add the two types of flour, sugar, oil, butter and if you want powdered milk, program.
2 minutes / Knead
Let the dough rest in the same Thermomix bowl for approximately 30 minutes.
When the dough doubles its volume, remove it from the Thermomix bowl and on a solid surface (table or kitchen counter) sprinkle flour and knead gently, until it forms a cylinder.
Cut the cylinder into 22 portions, shape each portion with your hand into a ball, while making them, cover them with a clean kitchen cloth.
When you finish forming the 22 balls of dough, make a hole in the center of each one with one of your fingers, making circular movements and lightly stretching to give the dough a bagel shape.
Preheat the oven to 170°C
On a greased baking tray lined with parchment paper along the surface, place the bagels and let them rest for about 20 minutes covered with a clean kitchen towel.
Heat 1000 grams of water, in the kitchen, in the microwave or in the same glass of the thermomix and pour that hot water on a tray also suitable for the oven, and place that tray in the lowest level of your oven.
After the 20 minutes of rest of the bagels, paint them with beaten egg and sprinkle the seeds of your choice (sesame and/or poppy).
Place the pan of bagels on the next level above the pan of water you put in earlier. This in order that the bagels are cooked with steam.
Bake for 20 minutes at 170° C
Once the bagels are cooked, remove them from the oven, cover them with a kitchen towel until the temperature drops.
