Ingredients of salmon croquettes in the thermomix
- 500 grams of fresh salmon
- 200 grams of wheat flour
- 75 grams of extra virgin olive oil
- 1 fish bouillon cube
- 150 grams of butter
- 1 small onion
- 1000 grams of whole milk
- ½ teaspoon ground black pepper
- ½ teaspoon ground nutmeg
- ½ teaspoon of salt
- For the salmon croquettes batter
- 2 beaten eggs
- 150 grams of breadcrumbs

- Abundant extra virgin olive oil
Preparation of salmon croquettes in the thermomix
- To begin the preparation, you must heat the oil in the Thermomix bowl for the preparation of the dough, to do this, pour the olive oil measure into it and program.
- 2 minutes / Temperature 120° / Speed 1.
- Once the oil is hot, carefully add the fish stock cube together with the fresh salmon without skin or bones, cooked and shredded, and program.
- 4 minutes / Temperature 120° / Reverse spin / Speed 1.
- Once the cooking time has elapsed, pass it over a colander or drain basket, pour into a bowl and set aside, without discarding the liquid it releases.
- To continue, again in the glass of the thermomix, the onion cut into pieces, program.
- 2 seconds / Speed 5.
- With the help of a spoon or spatula, lower the remains adhering to the walls and lid of the thermomix container towards the blades, then add the butter, program.
- 3 minutes / Temperature 120° / Speed 1.
- When the onion sauce is ready, pour the salmon cooking liquid together with the wheat flour and program.
- 3 minutes / Temperature 120° / Speed 2.
- We add the milk at room temperature, as well as salt, pepper and nutmeg, program.
- 10 seconds / speed 6.
- Then add 2 tablespoons of the reserved salmon to the mixture and set.
- 8 minutes / 100ºC / speed 4.
- At the end of the programmed time, pour the mixture into a large bowl and let it rest for a few minutes.
- When it is settled, add the rest of the salmon and mix very gently with the spatula.
- Put the bowl in the refrigerator with a transparent film cover that touches the dough so that it does not form a crust and leave it there for at least 8 hours so that it rests well before shaping and frying the croquettes.
- For the moment of assembling the salmon croquettes with a spoon or simply with lightly oiled hands, form balls, which will then pass first through the beaten egg and then through the breadcrumbs.
- Place the battered croquettes on a plate without touching them. In a saucepan or frying pan, heat plenty of oil over medium heat.
- Fry the croquettes, they can be several at a time but leaving space between them, turn them over so they brown evenly and drain on absorbent kitchen paper.
- You can accompany the croquettes with a rich sauce, of your choice.
