Bordeaux canelés with thermomix

Ingredients of Bordeaux canelés with thermomix
- 500 grams of whole milk
- 50 grams of aged rum
- 1 teaspoon vanilla extract
- 25 grams of butter
- 1 egg
- 2 egg yolks
- 240 grams of sugar
- 140 grams of flour
- Icing sugar or cinnamon for dusting
Preparation of Bordeaux canelés with thermomix
- Add the whole milk, the aged rum, the teaspoon of vanilla extract and the butter to the Thermomix bowl, program.
- 5 minutes / Temperature 100° / Speed 1
- Reserve this mixture for a few minutes until the temperature drops.
- Then, once you clean and dry the glass of the thermomix, and place 1 egg and the 2 yolks together with the sugar, program.
- 3 minutes / Speed 4
- Then add the flour to the mixture, program.
- 15 seconds / Speed 3
- Make sure the milk is not hot, if it is, use some quick cooling method such as passing the milk over and over again.
- Once the milk is at room temperature, remove the beaker from the Thermomix bowl lid, and add the milk little by little. It must rest for 24 hours, during this rest time, stir with a spoon several times, between 3 or 4.
- After 24 hours, grease each canelés mold with release oil (you can also use butter) and put the molds in the freezer for 30 minutes.
- Preheat the oven to 230°C.
- Arrange the already greased canelés molds on a baking tray and fill until they are completely full.
- Bake for 15 – 20 minutes, depending on the power of your oven, at the same temperature 230 °C. Then lower the temperature to 180°C and bake for another 1 hour and 15 minutes.
