50 grams of quinoa
200 grams of fresh spinach
1 small onion
2 garlic cloves
1 egg
50 grams of breadcrumbs (preferably whole wheat)
2 tablespoons grated Parmesan cheese (optional)
Salt and pepper to taste

Preparation of quinoa and spinach meatballs with thermomix
First, cook the quinoa following the instructions on the package. Once ready, let it cool.
Meanwhile, place the spinach in the Thermomix container and blend it for a few seconds at medium speed. Withdraw and reserve.
Next, place the onion and the garlic cloves in the Thermomix glass and chop them finely. You can program the machine at medium-high speed for a few seconds.
Add the shredded spinach, cooked and cooled quinoa, egg, breadcrumbs, grated Parmesan cheese (if desired), salt and pepper to taste. Mix all the ingredients at low speed for a few seconds, until you get a homogeneous mass.
Once the dough is ready, form meatballs of the desired size and place them on a separate plate or tray.
Heat a large skillet with a little extra virgin olive oil over medium heat. Place the meatballs in the skillet and cook for a few minutes on each side, until golden and crisp.
