Ingredients
A piece of pork loin
The juice of 4 oranges
75 grams of olive oil
2 cloves of garlic
½ onion
100 grams of white wine
200 grams of water
1 teaspoon cornstarch
Salt and pepper to taste
Preparation
We start like most of our stews, crushing the garlic cloves and the onion in the Thermomix bowl, program.
5 seconds / Speed 5.
When they are crushed, with the help of the spatula lower all the remains that have adhered to the walls of the Thermomix bowl towards the blades and then pour a little olive oil, salt and pepper to make a sauce, program.
5 minutes / Varoma temperature / Speed 1.
To cook the loin you have two options: place it directly in the glass and let it cook slowly or while the sauce is cooking in the Thermomix bowl, in a very hot frying pan and with a little olive oil, seal or brown each side of the loin, with this it has that golden color that is very tempting and somewhat crunchy and inside it keeps its juices (this last option is my favorite).
If your option is to cook everything in the thermomix, once the sauce is done, add the piece of raw pork loin and program.
It will do the same if you seal the piece of pork loin in the pan once the sauce is ready and the piece is sealed, place it in the Thermomix bowl and program.
5 minutes before the end of the cooking time, stop the thermomix, check the salt point, touch the piece with a fork to check its consistency, and then add the cornstarch diluted in a little water, this will give a little thickness to the sauce and prevent lumps from forming. Reactivate the thermomix.
At the end, remove from the Thermomix bowl, pour into a bowl and serve.
