3. Then add the water and program at speed 8 / 50º / 1 minute.
4. Pour the sugar, egg yolks and vanilla into the glass. Run the robot at speed 1 / reverse rotation / 30 seconds.
5. Then add the mascarpone and program at speed 1 / reverse turn / 45 seconds.
6. Reserve the contents of the glass in a bowl and add the egg whites and salt to it. Program at progressive speed 1 - 4/3 minutes. Then add the contents of the glass to the bowl and mix everything well. You will only have to fill the cups or bowls with the mousse.
