One of my favorite cakes, will be the memories of childhood but I love it.

Simple since it is based on chocolate and biscuit.

Ingredientes

  • For the base
  • 3 packages of chiquilin cookies
  • 250 grams whole milk
  • 1 teaspoon Vanilla sugar
  • 1/2 stick of cinnamon
  • a jet of cognac (if it's for a birthday of children we dispense with cognac)
  • For vanilla cream
  • 250 grams whole milk
  • 1 egg
  • 40 grams corn haina (cornstarch)
  • 25 grams butter
  • 1/2 teaspoon Vanilla sugar
  • 50 grams sugar
  • For chocolate cream
  • 250 grams whole milk
  • 1 egg
  • 35 grams sugar
  • 50 grams cocoa powder (Value)
  • 25 grams cornmeal (cornstarch)
  • 20 grams butter room temperature
  • Coverage
  • 150 grams liquid cream with 35% fat
  • 150 grams Chocolate Fondant

Preparación

  1. We make milk, cinnamon and vanilla in our glass of thermomix, if we are going to pour cognac it is the moment (if it is for children's birthday we dispense with cognac) We program 4 minutes, 90, left turn, spoon speed
  2. We reserve in a bowl while we make the creams.
  3. For the vanilla cream. We put in the glass, all the ingredients for vanilla cream, milk, 1 egg, cornstarch or flour, matequilla, sugar and vanilla sugar. Program 20 seconds speed 5
  4. We put the butterfly and program 10 min. 90º, vel.2. (It should be a thick cream, if it is not yet dense, give a little more time and temperature). Reserved.
  5. For the chocolate cream, without washing the glass, we put all the ingredients of the chocolate cream, milk, egg, sugar, cocoa, cornstarch and butter and we program 20 seconds vel.5.
  6. We place the butterfly and program 10 minutes, 90º, speed 2.
  7. It should be a thick cream, if it is not yet, give a little more time and temperature
  8. We assemble the cake. We are going to submerge biscuit with biscuit in milk (2 seconds per biscuit so that it does not break) and put the cookies in a mold making the whole base, spread half the vanilla cream
  9. Another layer of cookies equal to the previous, spread half of cocoa butter.
  10. Another layer of cookies like the previous one the other half of the vanilla cream, Another layer of cookies like the previous, the other half of the cocoa cream.
  11. We do the coverage We put in the glass liquid cream and chocolate 3 minutes 50º, speed 2
  12. And we cover them with the cake and put it in the refrigerator 6 hours minimum
