Meat broth concentrate with Thermomix

Preparation

1. We put the lean meat in our Thermomix bowl and grind
2. 15 seconds / speed 8
3. We take out and reserve in a bowl
4. We put the carrots, the celery and the onions together with the garlic, and the rosemary in our Thermomix bowl and we chop everything
5. 15 seconds / speed 5
6. we lower the remains stuck to the sides with the spatula
7. Add the salt, the bay leaf, the reserved meat and the red wine, put the basket on the lid instead of the goblet and program
8. 25 minutes / Varoma temperature / speed 2
9. we remove the basket, put the beaker and grind everything
10. 1 minute / progressive speed 6-7-8
11. At this point, the concentrate would be done and we can now store it in the fridge in a glass jar
12. however I like it drier and grainy so we are going to dehydrate it
13. we preheat the oven to 150º C
14. We put a baking tray covered with greaseproof paper, we pass the dough from our Thermomix bowl to the baking tray and distribute evenly and bake
15. 90 minutes at 150º C
16. Let cool and then break the mixture into pieces with our clean and dry thermomix, put the pieces in it and program 40 seconds / speed 8
17. we keep in the fridge in a glass jar. lasts for several months
