Ingredients
- 400 grams of unpeeled raw prawns
- 300 grams of clean white fish without skin
- 240 grams of coarse salt
Preparation
- We peel the prawns and reserve the meat and put the shells and heads in our Thermomix bowl and crush
- 5 seconds / speed 5
- We put everything in a fine strainer and pressing with a spoon we remove all the juice from the prawns and reserve the juice
- With a clean glass, add the juice that we had reserved, the peeled prawns and the white fish and grind everything
- 10 seconds / speed 8
- add the salt, remove the cup from the lid to evaporate and program
- 10 minutes / 100ºC / speed 1
- we remove the foam that has been produced and repeat another 10 minutes
- 10 minutes / 100ºC / speed 1
- then we grind
- 20 seconds / speed 8
- with the spatula we lower all the ingredients stuck to the sides and crush again

- If we want it hydrated, it would already be. I like it more dehydrated and that it is dry and powdered

- We preheat the oven to 150º C we put a baking tray covered with greaseproof paper, we transfer the vegetables from our Thermomix bowl to the baking tray and we evenly distribute the dough and bake
- 90 minutes at 150º C
- Let cool and then break the mixture into pieces with our clean and dry thermomix, put the pieces in it and program
- 40 seconds / speed 8
- Pour into an airtight jar and store in the refrigerator.
