Preparation of making fresh cheese with Thermomix

1. We put the milk, milk powder, rennet and salt in our Thermomix bowl and mix everything
2. 20 seconds / speed 3
3. Once mixed we program again
4. 6 minutes / 90ºC / speed 3
5. Let’s pour it into a bowl and let it cool, we will see how the rennet effect does its job and it will begin to curdle.
6. At that time we must cut the curdled milk with a knife into small pieces so that the whey it produces (grayish liquid) comes out and we will let it rest for at least 60 to 90 minutes.
7. Then we put all the cheese on a large strainer so that it finishes removing all the whey, and this in the thermomix basket inside the glass for 3 hours, so that all the whey goes down
8. We place the cheese on a kitchen paper and press it in case there are still small traces of whey left, once it is completely drained, we put it in a mold and put it in the fridge a few hours before eating.
9. and we have our fresh cheese ready, it can be served with jam or quince
