Floating islands with thermomix
Ingredients
- 800 grams of milk
- 6 buds
- 150 grams of sugar (divided into 80 and 70)
- 1 vanilla pod or 1 teaspoon vanilla paste
- 5 grams cornstarch
- 4 egg whites
- Pinch of salt
- 6 drops lemon juice or vinegar
- Caramel
Instructions
- We begin the preparation of these stupendous floating islands by adding to the thermomix glass the milk along with the yolks, 80 grams of sugar, cornstarch, the inside of the vanilla pod or vanilla teaspoon, programe. 10 seconds / Speed 4.
- Then place the butterfly in position and program again. 10-12 minutes / Temperature 90° / Speed 2.
- You should be watching the beat of the cream as it can be left before time, the consistency should be like an English cream, a smooth and homogeneous cream without lumps and delicious.
- Once the consistency has been taken, program again. 30 seconds / Speed 2.
- Pour cream into a dessert platter or into individual dessert cups.
- On the other hand, heat in a pot or saucepan water (not boiling).
- Immediately wash and dry very well the thermomix glass and the butterfly, leaving no residue of fat, as it could spoil the whipped egg whites.
- Pour the 4 egg whites together with the rest of the sugar and program. 4 minutes / Temperature 37° / Speed 3 1/2.
- Immediately program again. 4 minutes / Speed 4. Ready the cream and meringue is time to assemble the plate.
- With two tablespoons or with pastry sleeve add a portion of meringue to each individual dessert glass, if it is a serving dish, likewise place portions of meringue throughout the cream. Finish by garnishing with liquid caramel over the meringue flakes and by the cream.
