  • For the chocolate mousse:
  • 85 grams of milk
  • 180 grams of dark chocolate, at least 70%
  • 4 egg whites
  • 1 egg yolk
  • 20 grams of sugar
  • For the caramel mousse:
  • 150 grams of liquid cream
  • 200 grams of chocolate with caramel

  1. When you've gathered all those ingredients, follow the steps we've outlined:
  2. Start preparing the chocolate mousse by adding the chopped chocolate to the robot's glass and program at 10/5 seconds.
  3. Then, with the help of a spatula, lower the remains of the glass walls and add the milk. Program at speed 2 / 70º / 4 minutes.
  4. Then add the egg yolk and run the Thermomix at speed 4 / 20 seconds.
  5. Then pour the contents into a container. Clean the glass, place the whisk and add a pinch of sugar and whites. Program at speed 3 / 3 minutes.
  6. In the previous step, gradually add the rest of the sugar. Remove the whisk and mix the contents with what you have reserved and then pour it into six moulds so that each one is no more than 2/3 full.
  7. To prepare the caramel mousse, pour the ingredients into the glass and program at 2 / 70º / 4 minutes.
  8. Pour it into a container and put it in the fridge for 2 or 3 hours.
  9. After this time, pour it back into the glass of the robot and program at speed 3 / 4 minutes.
  10. Finally, distribute the contents of the glass in the moulds where you have the rest of the dessert and put them in the fridge until you are ready to serve them.
