The air fryer allows you to achieve a golden and crispy exterior while maintaining the juicy chicken inside, with a perfectly balanced flavor thanks to a mixture of spices and a touch of brown sugar that enhances the caramelization.
The best thing is that this homemade version is completely customizable: you control the quality of the chicken, the freshness of the ingredients and the amount of sauce, achieving a McChicken healthier, tastier and suitable for the whole family.

Homemade McChicken in Air Fryer
400 g minced chicken breast
2 tsp garlic powder
1 tbsp sweet paprika
1.5 tsp brown sugar
Salt and pepper to taste
½ tsp onion powder
150 g breadcrumbs or panko
3 tbsp mayonnaise
1 tsp yellow mustard
Juice of ½ lemon
4 hamburger buns
Chopped romaine lettuce
Sliced tomato
Mix the minced chicken breast with garlic, paprika, brown sugar, onion powder, salt and pepper. Refrigerate 30 minutes so that the spices integrate and enhance the flavor of the chicken.
Divide the meat into 4 portions and form into burgers. Pass them through breadcrumbs or pankoensuring that they are well coated for a crispy exterior. Spray with a little cooking spray to help brown.
Place the burgers in the basket air fryer to 180°C during 10–12 minutesturning halfway through cooking, until golden and crispy. The panko ensures a perfect exterior texture, while the chicken remains juicy.
Mix the mayonnaiseyellow mustard and lemon juice until achieving a homogeneous and slightly acidic sauce, ideal for balancing the intensity of fried chicken without oil.
Open the buns and spread a generous layer of sauce. Place fresh lettuce, the crispy chicken burger, tomato slices and, if you like, a little more sauce on the top. Ready to enjoy!
Breadcrumbs vs panko: Panko creates a lighter, airier crunch, while regular breadcrumbs provide a more even browning.
Customize the sauce: Add a touch of honey or Dijon mustard to vary the flavor profile.
Do not overload the fryer: Cook in batches if necessary to ensure air circulation and burgers are crispy on all sides.
Meat rest: Refrigerating the chicken mixed with spices enhances the flavor and prevents it from falling apart when forming the burgers.
