Ingredients for baked cheesecake with white chocolate and raspberry with Thermomix
For the base
60g of butter
120g shortbread cookies
For the cheese cake
250g white chocolate
350g cream cheese
1 tablespoon of cornmeal
50g sugar
3 large eggs
40g lemon juice (1-2 lemons)
1½ teaspoon vanilla essence
¼ teaspoon salt
500g sour cream
300g of raspberries
Preparation of baked cheesecake with white chocolate and raspberry with Thermomix
Lightly butter a 20 cm cake pan and line the base with baking paper.
Cover the outside with two layers of aluminum foil to seal.
Preheat the oven to 180 ° C.
For the base
Melt the butter for
2 minutes / 90˚C / Speed 2.
Add the biscuits and mix for
5 seconds / Speed 8.
Press into the base of the tin with the back of the spoon and bake at 180°C for 10 minutes.
For the cheese cake
chop the chocolate
5 seconds / Speed 8.
Melt the white chocolate for
2 minutes / 90˚C / Speed 2.
Add the cream cheese, cornmeal, and sugar and mix for
30 seconds / Speed 6.
Scrape down the sides.
While the blades are running, add the eggs one at a time to more than
1 minute / speed 3.
Add lemon juice, vanilla essence, salt and sour cream and mix for
20 seconds / Speed 6.
Scrape the sides down and mix for others
15 seconds / Speed 6.
Pour the cheesecake mix into the tin.
Sprinkle with half the raspberries and toss with a knife.
Place the cake tin in a roasting pan and surround with 3 cm of hot water. bake for 45 min at 180 °C.
Turn off the oven and, without opening the door, let it rest for 1 hour.
