Ingredients
300 grams of breadcrumb bread
800 grams of whole milk
The skin of 1/2 lemon
1/2 orange peel
A teaspoon of vanilla concentrate or a pod
3 tablespoons of liquor (rum, Cointreau, lucir 43 etc)
120 grams of sugar
2 eggs
2 tablespoons brown sugar
To batter:
2 tablespoons of white sugar
1 tablespoon of Cinnamon
Preparation
To start our torrija pudding we are going to put the breadcrumbs in our Thermomix bowl and program
10 seconds / speed 10
we put in a container and reserve
We put the milk, the lemon and orange peel in the glass, along with the sugar, the vanilla, the liquor and the cinnamon and we program
8 minutes / 90ºC / spoon speed / left turn
at the end we will leave it covered for a few minutes so that all the aromas are mixed
Then we strain the milk and put it back into our Thermomix bowl, add the bread that we had reserved and the eggs and program
10 seconds / speed 10
we heat the oven to 220ºC
In a non-stick tray of muffins or muffins, we spread liquid butter and then fill with our mixture
we bake at 220ºC / 20 minutes
while in a bowl we put brown sugar and cinnamon and mix well
Once the cakes come out, we pass them through this mixture of sugar and cinnamon, with a torch or burner we can burn the sugar on top a little so that it caramelizes
