Ingredients of smoked salmon mousse with thermomix

  • 250 grams of smoked salmon
  • 200 grams of fish broth
  • 200 grams of cream
  • 70 grams of butter
  • 5 sheets of gelatin
  • ½ teaspoon of salt
  • 1 pinch of ground pepper

Preparation of smoked salmon mousse with thermomix

  1. The first thing we will do is hydrate the gelatin in a bowl of cold water.
  2. we look for a mold of 1 liter of capacity and we grease it with butter and we cover it with plastic wrap
  3. we put in our glass of thermomix the fish broth, the cream and the butter and we program
  4. 6 minutes / 100°C / speed 1
  5. Add the smoked salmon in pieces, the hydrated gelatin, salt and pepper and blend everything
  6. 50 seconds / progressive speed 7-8-9
  7. We put the mixture in our mold and put in the refrigerator for a minimum of 6 hours
  8. unmold and cut into slices
