In these cold days, there is nothing better than a warm coffee with milk or a good chocolate accompanied by a rich pastries.
Today we bring you a classic of many houses, and many of you will have seen your mothers or grandmothers, the oil pancakes or Ines Rosales which is the best known brand of this rich cake.
100 grams of extra virgin olive oil
The skin of half a lemon
2 tablespoons aniseed grain
350 grams of strength flour
20 grams of fresh pressed yeast.
140 grams of water
40 grams of anise
2 tablespoons sesame or sesame
30 grams of sugar
1 pinch of salt
We start by pouring the olive oil into our thermomix together with the skin of the half lemon and heat
5 minutes / 100ºC / speed 1
After 5 minutes we made the anise and let it cool. Once cold remove the skin of the lemon.
Now put together in the glass of our thermomix, oil, flour, yeast, water and anise, sugar and salt. We knead
5 minutes / speed spike.
Once kneading everything we will let everything rest in our Thermomix bowl, and we will let the yeast work until the dough is doubled in size. Meanwhile we preheat the oven to 220ºC.
We take out the dough from our Thermomix bowl and stretch it very very very fine, making circles, for this we can help from a large lid or circular tapper that we have, the case is to make circles the size of the oil cakes that we want to make.
We are going to finally pour abundant sugar and bake them for 5 minutes and ready.
