Today we bring another recipe from our friend Luz Maria Lagoa Vives. Hello companions. The recipe that I am here to show you today is for recycling polvorones, I am sure that more than one of you have leftovers from this Christmas, and either you do not feel like eating them on their own, or you do not know what to use them for. Some time ago I uploaded a shortbread cake that is also super delicious.
Today I propose you some shortbread mousse cupcakes with chocolate glaze on the surface. Believe me when I tell you that they come out delicious. I hope you like them and I encourage you to do it ??

Ingredients for Mousse polvoron and chocolate cupcakes with thermomix
MOUSSE
5 polvorones (mine buttered with almonds)
400 ml cream (to mount)
350 grams creamy natural yogurt (Greek type)
90 grams brown sugar
5 sheets neutral gelatin
GLAZED
225 grams dark chocolate (70% cocoa)
190 ml cream (to mount)
Toasted diced almonds

MOUSSE
We put the polvorones in the glass,
5 seconds / speed 5
we add the yogurt
5 seconds / speed 5
We remove to a bowl
We put the gelatin to hydrate in cold water, 6/8 minutes / without needing to wash the glass, we put the cream and sugar,
5/6 minutes / 37°, speed 2
Drain the gelatin and add it to the glass,
5 seconds / speed 3
We wait a few minutes for the temperature to drop a bit, so that it doesn’t cut us. Then, we add the mixture of polvorones and yogurt,
*15 seconds / speed 3.
We have several presentation options, such as making it in a cake mode with an 18/20 cm mold, in small glasses or in individual molds, as in my case.
So I’ve filled in the cavities, leaving room for the frosting.
We leave in the fridge for about 4/6 hours (time that it gives to set) and be able to cover with the glaze

Cream in the glass
3 minutes / 90° / speed 1
add the chopped chocolate
2 minutes / speed 2
We overturned a jug.
Take the mousse out of the fridge, pour the glaze over the surface, and decorate with the almonds. We take again to the cold, 2/4 hours.
