Ingredients
- 300 grams of lean meat
- 100 grams of carrots
- 100 grams of onion
- 100 grams of celery
- 4 sprigs of rosemary
- 1 clove garlic
- 150 grams of coarse salt
- 30 grams of red wine
- 1 dried bay leaf
Preparation
- We put the lean meat in our Thermomix bowl and grind
- 15 seconds / speed 8
- We take out and reserve in a bowl
- We put the carrots, the celery and the onions together with the garlic, and the rosemary in our Thermomix bowl and we chop everything
- 15 seconds / speed 5
- we lower the remains stuck to the sides with the spatula
- Add the salt, the bay leaf, the reserved meat and the red wine, put the basket on the lid instead of the goblet and program
- 25 minutes / Varoma temperature / speed 2
- we remove the basket, put the beaker and grind everything
- 1 minute / progressive speed 6-7-8
- At this point, the concentrate would be done and we can now store it in the fridge in a glass jar
- however I like it drier and grainy so we are going to dehydrate it
- we preheat the oven to 150º C
- We put a baking tray covered with greaseproof paper, we pass the dough from our Thermomix bowl to the baking tray and distribute evenly and bake
- 90 minutes at 150º C
- Let cool and then break the mixture into pieces with our clean and dry thermomix, put the pieces in it and program 40 seconds / speed 8
- we keep in the fridge in a glass jar. lasts for several months
