The recipe of cakes and their variants are infinite, in this opportunity we will show you a proposal, not far from the original but with a variant added, in this case we speak of a lemon cake and ricotta with thermomix.
1 dough for cakes (if you like it, it can be homemade)
500 grams of ricotta cheese
150 grams of icing sugar
The zest and juice of 1 lemon
3 eggs Whipped cream or whipped cream for garnish
Take the time to prepare the cake dough yourself, or you can replace it with a ready-made dough purchased from the super or simply make a base of crushed cookies and melted butter (this last option is also feasible). Once you have the dough, spread it out on the counter or work table forming a circumference of about 20-23 cm, the same size as the cake pan.
Place the circumference of dough in the cake pan and cover on all sides, prick with a fork on all sides.
If you use the cookie base, just mix the crushed Maria cookies with the melted butter and spread them all over the surface of the cake pan.
In the thermomix glass place the eggs and icing sugar to beat, program. 3 minutes / Speed 3.
Then add the ricotta cheese together with the grated zest and lemon juice, program. 2 minutes / Speed 4.
Carefully pour the mixture over the cake dough base or cookie base and in a preheated oven at 180°C, place the cake.
Bake at 180°C for 30 minutes. Remove from oven, let stand and then refrigerate for at least 1 hour for the cake to take consistency.
When serving and if you want to decorate, beat a little cream until it is whipped and with a pastry sleeve decorate with cream flakes and a little lemon zest.
