Lemon and ricotta cake with thermomix

Preparation

1. Take the time to prepare the pie crust yourself, or you can substitute ready-made groceries or simply make a base of crushed biscuits and melted butter (this last option is also doable).
2. Once you have the dough, spread it out on the counter or work table forming a circumference of approximately 20-23 cm, the same size as the cake pan.
3. Place the circle of dough in the tart pan and cover on all sides, prick with a fork on all sides. If you use the cookie base, you only have to mix the crushed Maria type cookies with the melted butter and spread them over the entire surface of the mold.
4. In the glass of the thermomix place the eggs and the icing sugar to beat, program.
5. 3 minutes / Speed ​​3.
6. Then, add the ricotta cheese along with the lemon zest and juice, program.
7. 2 minutes / speed 4.
8. Carefully pour the mixture over the pie crust or biscuit base and place the pie in an oven preheated to 180°C.
9. Bake at 180°C for 30 minutes.
10. Remove from the oven, let rest and after that, refrigerate for at least 1 hour so that the cake takes consistency.
11. At the moment of serving and if you want to decorate, beat a little cream until smooth and with a pastry bag decorate with cups of cream and a little lemon zest.
