  • For the cake:
  • The zest of half a lemon
  • 4 eggs
  • Powdered yeast sachet medium
  • 75 grams of sugar
  • 50 grams of almond flour
  • 50 grams of corn flour
  • For the stuffing:
  • 100 grams of liquid cream
  • 260 grams of ricotta, i.e. cottage cheese
  • 3 medium pears
  • 1 teaspoon brown sugar
  • 1 teaspoon butter
  • 3 tablespoons icing sugar

  1. Once you've gathered all those ingredients, follow the steps below:
  2. Place the whisk on the robot and add the egg whites. Program at a speed of 3.5 / 3 minutes.
  3. Set aside, remove the whisk and add the egg yolks and sugar to the glass. Program at speed 3 / 20 seconds.
  4. Then add the two types of flour, lemon zest and yeast.
  5. Run the robot at speed 4 / 20 seconds.
  6. Add the reserved egg whites and mix everything with a spatula.
  7. Pour the contents of the glass into a sponge cake mould, in which you will have placed baking paper.
  8. Put it in the preheated oven and keep it there for 15 minutes at 180º.
  9. After some time, unmold it and roll it up in a clean kitchen cloth.
  10. For the filling, pour the butter into the frying pan and then pour in the peeled and chopped pears.
  11. Add the brown sugar, stir well and let cool.
  12. Place the whisk in the glass and add the cream and ricotta. Program at speed 3 / 1 minute.
  13. Then add the icing sugar and program at speed 3 / 40 seconds.
  14. Then pour the already caramelized pears and program at speed 2 / inverse turn / 10 seconds.
  15. Unroll the prepared sponge cake, spread it over the filling, roll it up again and place it in the freezer for at least 2 hours.
