Ingredients
1 kilo of rack of lamb already boneless
2 apples cored and cut into chunks
1.3 liters of water
2 tablespoons beef extract
100 grams of white wine
Ground black pepper to taste
260 grams of onions
2 tablespoons of liquid caramel
55 grams of seedless raisins
32 grams of lard chopped
2 teaspoons Provencal herbs
Preparation
When you’ve gathered those ingredients, follow the steps below:
On the outside of the meat add pepper, half of the Provencal herbs and also half of the beef extract and the caramel.
Take a large plastic wrap and add some oil and lard to it. On these, put the meat with the side that you have seasoned facing down.
On the other side of the meat add pepper, Provençal herbs, caramel and beef extract.
In the middle of the meat put the raisins and the apple.
Then roll the meat well with the plastic wrap and put another layer of that paper on it again so that it is perfectly made into a roll.
Add the onion to the basket and put it in the robot. Pour the water into the glass and place the Varoma, in which you will put the meat. Program a
speed 1 / Varoma temperature / 40 minutes.
After that time, turn the meat over and reprogram

Remove the basket and the Varoma.
Remove the paper from the meat and put it on a baking tray, pouring the liquid that has remained in it over it. Also place the onions around.
