- 20 grams of raisins
- 20 grams of pine nuts
- 50 grams of olive oil
- 6 dried figs
- 100 grams of white wine
- 400 grams of water
- 2 cloves of garlic
- 2 large onions
- 1 teaspoon salt
- 2 teaspoons black pepper
- ½ teaspoon of hot paprika
- ½ teaspoon dried thyme
- ½ teaspoon crumbled dried sage
- ½ teaspoon fennel seeds
Preparation
- To start the preparation of this recipe, make sure you have clean the lamb meat, without fat or nerves, cut it into medium-sized cubes.
- Then, in a frying pan, heat a little olive oil and sauté the lamb meat. From 7 to 10 minutes, stirring constantly so that the cubes of lamb meat are browned.
- When it is well browned, add the wine to deglaze the bottom of the pan and, with the spoon, stir very well from the bottom. Turn off the heat, let it rest and reserve.
