Today we bring a delicious cream of green asparagus or also called wild asparagus, ideal for cold days and drink it warm or in the middle of summer and drink it cold.

a while ago we did White Asparagus Cream so it was time for the green asparagus, quite easy to make like most of the creams and soups for thermomix

Ingredients of Green asparagus cream with thermomix

  • 2 bunches of green asparagus
  • 30 grams of olive oil
  • 1 large onion
  • 350 grams of zucchini
  • 1/2 liter of vegetable broth
  • 175 grams of cooking cream.
  • salt and ground black pepper to taste

Preparation of green asparagus cream with thermomix

  1. We start by washing and dividing the courgettes into pieces, we also wash the asparagus and remove the hard piece from below the stem and then we divide them into 3 pieces, leaving the yolks aside (the yolks are the upper part of the asparagus)
  2. In our Thermomix bowl we put the oil and heat
  3. 3 minutes / varoma temperature / speed 1
  4. Add the yolks or top of our green asparagus and sauté
  5. 3 minutes / varoma temperature / left turn / spoon speed
  6. remove the braised asparagus and reserve (we leave the oil in our glass)
  7. then add the chopped onion and chop
  8. 6 seconds / speed 6
  9. Once the onion is chopped, fry
  10. 5 minutes / varoma temperature / speed 1
  11. we add the zucchini in pieces and the asparagus and chop
  12. 7 seconds / speed 6
  13. once chopped we program
  14. 3 minutes / varoma temperature / speed 1
  15. We add the Vegetables soupsalt and pepper to taste and program
  16. 25 minutes / 100º C / speed 1
  17. Add the cooking cream and program
  18. 1 minute / 70ºC / speed 3
  19. Let stand for a few minutes and then grind everything well so that our cream is smooth
  20. 2 minutes / progressive speed 8-9-10
