Ingredients
For the praline:
50 grams of raw almonds without skin
26 grams of water
50 grams of sugar
For the ice cream:
22 grams of pure cocoa powder
500 grams of very cold cream
Cookies or tulips for ice cream
322 grams of condensed milk
Preparation
When you have gathered all those ingredients, follow the steps that we indicate:
Start by preparing the praline by pouring the sugar and water into a pan and heat them until they melt and have a golden appearance.
Then, put the almonds in that pan to make them caramelize. When they do, put them on a tray lined with parchment paper to cool.
When they are cold, put them in the robot’s glass and program to
speed 5/5 seconds.
Reservation.
To make the ice cream, place the butterfly on the blades. Add the cream and whip it to
speed 3.5.
Remove the butterfly and pour the whipped cream into two containers, half in each. Reservation.
In one of these containers add about 160 grams of condensed milk and stir well with a spatula. Then pour it into an ice cream mold, previously lined with plastic wrap. Get the ice cream well by spreading it all over the mold and sprinkle it with the praline. Reservation.
The rest of the condensed milk add it to the Thermomix bowl with the cocoa. Program a
speed 3/30 seconds.
The contents of the glass pour it over the other half of the whipped cream, stir everything well and pour it into the ice cream mold. It should spread well and then you have to cover it with plastic wrap. Put it in the refrigerator for a minimum of 8 hours.
After that time, unmold and make sandwich by sandwich using the cookies or tulips.
