Truffle mousse with thermomix

Preparation

1. To start our mousse we will have our glass of very cold thermomix (we can have it in the refrigerator for a while before or even put some ice in a while before and then dry with a cloth before starting
2. this will help the cream to mount
3. We will put the sugar in the Thermomix bowl and program
4. 8 seconds / speed 10
5. with the spatula we lower the remains glued to the sides
6. add the cream and program
7. 6 minutes / 90ºC / speed 2
8. We add the chocolate in pieces and program
9. 30 seconds / speed 3
10. We put everything in a bowl and let it cool for 12 hours
11. finally we place the butterfly, we put the truffle cream and we program
12. speed 3 (no time)
13. until it is mounted
