Ingredients
- 6 slices of foie
- 90 grams of seedless raisins
- 6 slices of quince
- 100 milliliters of cream
- Salt to taste
- The juice of half an orange
- A small spoonful of cornstarch
- Half a bottle of Pedro Ximénez
Preparation
- When you have gathered all those ingredients, follow the steps that we indicate:
- Put the raisins in the wine and keep them there for a minimum of 8 hours.
- After that time, remove them from the wine and put it in the robot’s glass. Program a
- speed 2 / Varoma temperature / 30 minutes.
- Then add the grapes, the juice diluted in the cornstarch, the cream and the salt to the glass. Program a
- speed 2.5 / Varoma temperature / 15 minutes.
- Now, take a slice of foie and on top of that place a sheet of quince and another of foie, then, in this way, give it a ’round and round’ in the pan with hot oil.
- Now all you have to do is plate it by placing a base of the contents of the glass on the plate and on top of that place the quince and foie millefeuille.
