This recipe has been sent by our friend Luz Maria Lagoa Vives. Hello companions. Well, once again, innovating a new recipe for the use of egg whites. I have left you several ideas in previous posts on what to spend on a sweet preparation, today I have opted to make some tiramisu muffins or cupcakes,,, yes, you heard correctly.
The dough is as if you were putting a bite of that delicious cake on the palate.

Ingredients for Tiramisu Muffins with thermomix
MASS
- 7 egg whites with a pinch of salt
- 125 grams wheat flour
- 32 grams pure cocoa powder
- 10 grams soluble coffee
- 1 on chemical yeast (Royal type)
- 165 grams sugar
- 75 grams mascarpone cheese
- 75 ml sunflower oil
- 45 ml coffee liqueur
DECOR
- 150 ml cream (to mount)
- 40 grams mascarpone cheese
- 20 grams icing sugar
- cocoa powder
Preparation of Tiramisu Muffins with thermomix
- We start by turning on the oven at 180°, heat up and down
- We sift the dry ones, for this, we put in the glass, flour, cocoa, coffee and yeast,
- 10 seconds / speed 8
- set aside and reserve
- Wash and dry the glass extremely.
- We place the butterfly in blades and mount the whites with the Pizquina of salt,
- 5 minutes / speed 3’5
- set aside and reserve
- Remove the butterfly, add the cheese and sugar,
- 30 seconds / speed 4
- add the liquor and oil,
- 10 seconds / speed 4
- now the reserved dry ones,
- 6 seconds / speed 3
- Finally the whites mounted,
- 10 seconds / speed 5
- We finish mixing with a spatula
- We fill the 3/4 parts of the capsules.
- We bake about 22 min. after checking the toothpick, it comes out clean.
- Turn off and let cool on rack
DECOR
- We mount the cream with the cheese and sugar at speed 3’5. With butterfly on blades.
- We place in a pastry bag.
- And we decorate our muffins and sprinkle cocoa
- ONLY LEFT TO ENJOY, GOOD APPRECIATION.
