500 grams of pasta, preferably spaghetti cooked aldente
1 large onion
80 ml of olive oil
1 egg yolk
Salt and pepper to taste
150 grams of bacon cut into thin strips
70 grams of grated Parmesan cheese
The first thing we must cook is the pasta, each brand or type has an estimated cooking time, use the one of your preference.
It is very simple to do, in a pot put the water to boil, salt to taste and when the water is about to boil, add the Spaghetti.
Reserve for a while.
Our ally in the kitchen Thermomix will help us to chop the onion without making us shed any tears, put the whole onion in the Thermomix glass and program it 5 seconds / speed 5
Meanwhile, in a very hot frying pan place the 80 ml of olive oil and fry the 150grs of bacon until golden brown, leave to cool and set aside a little to decorate each plate.
Remove the onion pieces from the Thermomix glass and leave them on one side as you proceed to beat the eggs and yolk together with salt and pepper to taste, mix for 20 seconds / speed 4.
To the egg mixture add 60 grams of Parmesan cheese (reserve the rest to serve) and the onion that we had left aside a few minutes ago, mix again in the Thermomix 10 seconds / speed 3.
In a large pan place the cooked Espaquetis aldente, add the creamy mixture of eggs, cheese and onion, immediately add the fried bacon and sauté for 30 seconds, mixing well all the ingredients and flavors.
Serve hot the amount of Spaghetti to taste for each diner and sprinkle with a little more Parmesan cheese and bacon each dish.
