Preparation of quinoa and spinach meatballs with thermomix

1. First, cook the quinoa following the instructions on the package. Once ready, let it cool.
2. Meanwhile, place the spinach in the Thermomix container and blend it for a few seconds at medium speed. Withdraw and reserve.
3. Next, place the onion and the garlic cloves in the Thermomix glass and chop them finely. You can program the machine at medium-high speed for a few seconds.
4. Add the shredded spinach, cooked and cooled quinoa, egg, breadcrumbs, grated Parmesan cheese (if desired), salt and pepper to taste. Mix all the ingredients at low speed for a few seconds, until you get a homogeneous mass.
5. Once the dough is ready, form meatballs of the desired size and place them on a separate plate or tray.
6. Heat a large skillet with a little extra virgin olive oil over medium heat. Place the meatballs in the skillet and cook for a few minutes on each side, until golden and crisp.
7. Once the meatballs are cooked, remove them from the pan and place them on absorbent paper to remove excess oil.
8. And there you have it! Quinoa and spinach meatballs ready to taste. You can serve them as a main dish, accompanied by a homemade tomato sauce or your choice, or even as part of a delicious sandwich or salad.
