18 quail eggs
18 large whole mushrooms
50 grams of sobrasada
80 grams of shallots
40 grams of butter
1 pinch of fresh rosemary
3 pinches of salt
1 pinch of ground black pepper
80 grams of cream (35% fat)
2 pinches of freshly ground black pepper

remember that the mushrooms must be large enough since in what is the hat we are going to introduce the quail eggs and the rest of the ingredients so we must buy them as large as possible
The first thing we are going to do is clean the mushrooms and separate the cap from the trunk
and we will reserve the trunks and the cuts of the mushrooms for the stew
take the varoma container and line it with baking paper and place the caps of the mushrooms with the body facing upwards
we put a piece of sobrassada in each 1 of the mushrooms and a quail egg already opened inside each mushroom we cover the varoma tray and reserve
in the Thermomix bowl we are going to place the trunks of the mushrooms that we have cut and the cuts and we are going to chop them for it we program

we take them out of the glass and reserve
put the shallots cut into pieces inside the glass and program

We lower with the spatula any rest that was stuck to the sides of the glass
add the butter and fry

Add the chopped mushroom, the Rosemary, a little salt and a little pepper, put the varoma in its position and program

Remove the Varoma and reserve.
Add the cream to our Thermomix bowl and program again
