Quail ingredients in citrus sauce with thermomix
- 4 quail
- 100 grams of freshly squeezed orange juice
- 40 grams of lime juice
- 50 grams of soy sauce
- 100 grams of honey
- 8 black peppercorns
- 80 grams of water
- 1 Granny Smith apple (without skin and without seeds) in pieces of 2 cm
- 1 thinly sliced orange cut in half
Preparation of Quail in citrus sauce with thermomix
- to start our recipe we must perfectly pluck the quail and reserve
- we put in our Thermomix bowl the orange juice, the lime juice, the honey, the pepper and the soy sauce and program
- 3 minutes / 100 °C / speed 2
- add the cleaned quail, the chopped apple, the water and program
- 25 minutes / 100°C / reverse rotation / spoon speed /
- With great care not to burn ourselves, using kitchen tongs, remove the quail from our Thermomix bowl, place them in a bowl, leave the sauce in the Thermomix bowl and program again
- 10 seconds / speed 4
- add the orange slices and program
- 10 minutes / varoma temperature / reverse rotation / spoon speed
- we put the sauce on top of the quail and our dish will be ready
