Ingredients for pickled quail with thermomix
- 4 quail
- 300 grams of fresh boletus
- 10 grams of dehydrated boletus
- 200 grams of hot water
- ½ vegetable bouillon cube
- 35 grams of extra virgin olive oil
- 80 grams of shallots
- 2 cloves of garlic
- (cut into 5-7 mm slices)
- 1 teaspoon of mixed dried aromatic herbs (thyme, rosemary, oregano, etc.)
- 8 black peppercorns
- 1 dried bay leaf
- ½ dry chilli pepper without seeds
- 1 tablespoon of honey (20 g)
- 2 tablespoons soy sauce
- 80 grams of sherry vinegar
- 80 grams of white wine
- 100 grams of olive oil
- 2 pinches of salt
Preparation of pickled quail with thermomix
- To start, we put the dehydrated boletus with the hot water in our Thermomix bowl, we put the stock cube and we crush everything, for this we program
- 15 seconds / speed 7
- We put the content in a bowl and reserve for later
- put the virgin olive oil, the shallots in pieces and the garlic in our Thermomix bowl and chop
- four seconds / speed four
- then we sauté
- 5 minutes / 120 °C / speed 1
- we add the fresh boletus, the peppercorns, the bay leaf, the chilli and the aromatic herbs and we program
- 3 minutes / 120 °C / reverse rotation / spoon speed
- add the honey, vinegar and soy and sauté
- 2 minutes / 120 °C / reverse rotation / spoon speed
- we add the quails to the Thermomix bowl perfectly clean and plucked in a vertical position with the legs up
- add the reserved boletus broth together with the white wine, salt and olive oil and program
- 35 minutes / 100 °C / reverse rotation / spoon speed
- remove the quail from a bowl, carve them into four pieces each and place them in an airtight container
- strain the liquid and reserve
- we add the boletus that we have in the basket on top of the quail
- and we put the liquid in our Thermomix bowl and program
- 10 minutes / varoma temperature / reverse rotation / speed 1
- pour the liquid over the quail and let it rest for at least 24 hours to reduce the sauce
