Ingredients of broccoli, pear and blue cheese gratin with thermomix

550 grams of broccoli florets
350 grams of pears
150 grams of blue cheese
50 grams of grated Parmesan cheese
400 grams of milk
50 grams of butter
50 grams of wheat flour
150 grams of dry short pasta (macaroni, fussili, farfalle, etc.)
1500 grams of water
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon ground nutmeg

Preparation of Gratin of broccoli, pear and blue cheese with thermomix

To begin the preparation of this wonderful dish, wash well and cut the broccoli into florets, place the broccoli florets in the varoma container.
If you don’t have grated Parmesan cheese, it’s time to do it, in the thermomix. Add the Parmesan cheese in pieces to the Thermomix bowl and program.
15 seconds / Speed 10.
Then, wash and dry the glass of the thermomix, pour the water into the glass, place the Varoma container in its position, cover the Varoma and program.
20 minutes / Varoma temperature / Speed 1.
After the time has elapsed, carefully remove the varoma container and reserve for a few seconds.
Subsequently, add the pasta to the hot water in the Thermomix bowl and again place the varoma container in its position, as well as place the Varoma tray and put the pears (clean, peeled and cut into cubes). Cover the Varoma and program.
10 minutes / Varoma temperature / Reverse rotation / Spoon speed.
Very carefully remove both the tray and the Varoma container. Then, drain the pasta in and pour it into an ovenproof dish.
Add to the baking dish along with the pasta, broccoli and remaining pears, mix lightly so as not to spoil the broccoli and pear pieces.
Preheat the oven to 200°C.
Again, in the glass of the thermomix, clean and dry. Add butter and program.
2 minutes / Temperature 100°C / Speed 1.
Once the butter has melted, add the flour and program.
10 seconds / Speed 3.
Immediately pour in the milk, along with the salt, pepper and nutmeg and program.
10 minutes / Temperature 90° / Speed 4.
To continue the preparation of this variety of bechamel sauce, add the blue cheese and program. 20 seconds / Speed 5.
Pour the sauce over the pasta, pears, and broccoli on the platter and sprinkle with the grated Parmesan cheese.
Bake in the oven for 10 minutes at 200°C or until the cheese gratins and is appetizingly golden.
Remove from the oven and let rest a couple of minutes for the flavors to settle.
