The first time I tried an ice cream cheese was in Asturias and I loved it, its flavor and creamy texture conquered me.

Since then I have tried a lot and with each type of cheese it gives its differentiating point today we bring one that I love with Basque cheese of ideazabal.

  • 5 sheets of gelatin.
  • 250g of fresh milk
  • 550 grams of liquid cream.
  • 500 grams of idiazabal cheese in pieces.
  • 100 grams of sugar
  • An egg white
  • A few drops of lemon.
  • Salt
  • Pepper


  1. First of all we will put the leaves of gelatin, in cold water to hydrate, we will put them one at a time, not at once.
  2. We start by putting the milk in our glass of thermomix and we program
  3. 2 minutes / 50º / speed 1
  4. Drain the gelatine leaves and add them to the Thermomix glass, mix everything
  5. 7 seconds / speed 4
  6. We put the content in a bowl and reserve. Without washing the glass of Thermomix we toss the rest of the ingredients, cream, sugar, cheese, egg white, a few drops of lemon and salt and pepper to taste and mix the elements
  7. 1 minute / speed 3
  8. We incorporate the milk with gelatin and let it cool inside the glass of Thermomix, we put it in a wide container type tray, where we can then use with a scoop of ice cream and put the mixture in the freezer for a minimum of 3 hours.
