The first time I made it was almost by chance, trying the air fryer on a Sunday without wanting to complicate things… and since then it has become a classic at home. It is one of those recipes that always surprises, even those who say they “don’t like eggplant.”

- 🧀 2 mozzarella balls (optional)
- 🧂 Salt to taste

- 🍅 2 natural tomatoes

The mozzarella is totally optional. You can make a vegan version by eliminating the cheese or substituting it with vegetable cheese. The recipe is naturally gluten-free.

What you need:
- Air fryer (minimum 4 liters)
- A mixing bowl

Previous preparation:

① Wash the eggplants and place them between two toothpicks. Make half-centimeter cuts without reaching the end.
② In a bowl, mix the olive oil with the paprika, oregano, garlic powder, salt and pepper.
③ Paint the eggplant well, opening the slices so that the dressing reaches the inside.
④ Place a base of tomato sauce on the tray and put the eggplants on top.
⑤ Cook in the air fryer at 180°C for 30 minutes.
⑥ Add slices of tomato and mozzarella between the cuts, a splash of oil and cook for 10 more minutes.
